Description

Discover the harmony of nature in every cup with Mori-Yun(森韵), our signature ceremonial-grade matcha from Kyoto’s Uji region — Japan’s most renowned terroir.

Crafted from 100% first-harvest (一番茶 / Ichibancha) young leaves, grown under shade for three weeks and stone-milled in small batches, Mori-Yun offers a silky texture, clean umami, and a delicate, creamy finish — no bitterness, just quiet balance.

Inspired by the Japanese concept of 調和 (Chōwa) – harmony and calm – this matcha is perfect for mindful mornings, meditative moments, or elevated daily rituals.

With its vibrant green color, ultra-fine texture, and naturally sweet aroma, Mori-Yun is a premium expression of authentic Japanese tea culture.

Brewing Notes (Usucha Style)

  1. Warm your matcha bowl (chawan) and bamboo whisk (chasen) with hot water. Discard the water and dry the bowl completely.
  2. Sift 2–3 grams (about 1–1.5 teaspoons) of matcha into the bowl using a fine mesh sieve.
  3. Add 60–70 ml of hot water at 70°C
  4. Whisk briskly in a zigzag “M” or “W” motion until the surface is frothy with fine bubbles.
  5. Enjoy immediately, sipping directly from the bowl to savour the vibrant, umami-rich flavor.

CULTIVAR DETAILS

Samidori(さみどり), first selected in the 1930s from seed-grown Zairai trees, is now a signature Kyoto cultivar prized for Tezumi (traditional hand-picking). Its glossy, vibrant shoots and long harvest window allow pickers to choose the best leaves with precision.
Processed into Tencha, Samidori produces Matcha of deep green color, low bitterness, gentle sweetness, and refined umami—an elegant tea that invites another bowl.

REGIONAL DETAILS

Regional Heritage
Nagare-Bashi, the “flow-away bridge” often seen in Japanese media, is also found here—though it suffered damage from a recent typhoon. Yet, beyond the bridge, this basin has been home to tea cultivation for more than 350 years.

Natural Terroir
The land’s unique environment nurtures exceptional tea. Mist from the river shields the leaves from harsh sunlight, while sandy, well-draining soil and river nutrients support healthy growth. Even in dry summers, the river provides natural cooling and sustains the plants when water is scarce.
